The advantages of keeping only one day of yom tov are wonderful--on Succos or Pesach.
An extra day of Chol Hamoed, no more 3 day yom tovs. Less food to cook, more opportunity
On Shavous I had to overcompensate, as I was saddened by the shortening of my wonderful Matan Torah. So I made two cheesecakes. Which we then ate for the rest of the week. Instead of meals…
But, amazingly, one cheesecake, much as one day of yom tov, did come out better than the other. It was easier to savor, letting the creamy double layers of cream cheese and sour cream melt in our mouths. The other one was overcooked. Still tasty, but a little dry.
After all, coming back the second time isn't quite as sweet.
